Butternut Squash Soup

Squash tastes pretty amazing. It has a slight sweetness to it you can’t get enough off. You can serve it with steak, mashed potatoes, stir fry, and so many other foods! It’s also very healthy for you. When it comes to squash it’s hard to go wrong with this food. It can be prepared so many different ways. It’s easy to work with, and cooking it is never really a hassle. So, you’re in the mood for some delicious squash we decided to bring to you today a recipe to have butternut squash soup in your own home. Enjoy!

Butternut Squash Soup Recipe


  • 1 medium yellow onion, chopped (1 cup)
  • 1 celery rib, chopped (3/4 cup)
  • 1 carrot, chopped (3/4 cup)
  • 2 Tbsp butter
  • 1 butternut squash, peeled and chopped, seeds discarded
  • 1 tart green apple, peeled, cored, chopped (squash and apple ratio should be 3:1)
  • 3 cups chicken stock or broth
  • 1 cup water
  • Pinches of nutmeg, cinnamon, cayenne, salt and pepper


  • Get a large pot and put it on medium-high heat. First, melt the butter in it. After the butter is melted then add the celery, onion, and carrot. Sauté all of them for at least five minutes. If the vegetables begin to turn brown it’s best to lower the heat.
  • Add in the water, butternut squash, broth, and apple. Bring the entire mixture to a boil. After it begins to boil bring it down to a simmer. Cover the pot and let the mixture simmer for half an hour. Do this until the carrots and squash are soft.
  • You’ll want to puree the soup in a blender. If you want, you can do it in batches to make the process easier.
  • Add the pinches of cayenne, nutmeg, and cinnamon. Add pepper and salt as desire for taste. It’s recommended you garnish the soup with either some freshly chopped chives or parsley.

This soup is great to eat for a quick lunch alongside some salad. During these cold winter months it’s sure to warm you up if you’ve had to work in the snow all day. If you’re also thinking of having it for later that’s great too. This soup is a good way to put something away in the fridge for a day. When you come back all you have to do is heat it up and you have a quick dinner to eat. If you make a lot of soup ahead of time you can have it for the rest of the week.
