I am crazy about Thanksgiving & Christmas Day leftovers.  I am not sure why, but sometimes I think the turkey & stuffing actually tastes better the next day (plus, I am a huge fan of fresh turkey & swiss sandwiches). 

This year, we have an abundance of leftovers and I thought I would stretch the leftovers with some creative leftover stuffing & turkey recipes.   I tried the first one last night and it was fabulous!

Now this is my kind of cookie recipe.  MSN just posted a great article about how to use a single, simple sugar cookie recipe to create 25 different cookies.  Some are elegant, some are childish and all of them look absolutely de-lish!

I was just pondering a Costco holiday cookie tray...but may change my mind after seeing this.

Baked Spaghetti: Quick, Easy and De-lish Bulk Recipe

 

I am right in the middle of a "pantry challenge". 

What's that?  Well, it means different things for different people.  For me, the pantry challenge means that I am trying desperately to put off grocery shopping (one of my least favorite things in the world). 

Basically, I am going through my pantry and trying to come up with creative meals with all of the stuff I haven't used yet.  Let's just say that we've eaten a lot of tacos, grilled cheese sandwiches and hot-dogs this week.

I was very excited about tonight's meal, however.  I found a recipe for a fantastic baked spaghetti on AllRecipes.com. 

Since I purchase my cheese, spaghetti sauce and noodles at Costco, I have an abundance of those items to use. 

I decided to make three batches of the dish (without even trying it first).  Really - how can anyone (including me) mess up a spaghetti dish?

The great thing about this recipe is that it is super-simple to make mass quantities of it and it freezes wonderfully. 

A quick tip:

Line your baking dishes with at  least two layers of tin foil before adding the ingredients making sure you allow enough extra tinfoil on the sides to completely cover the dishes.

Then, "quick-freeze" the dishes (including the pans).  This will take several hours.  Once the dishes are solid (like a brick) remove them from the pans, label and freeze them for later use.

When you are ready to cook the meal, you simply place the "brick" back into the original dish and bake.

Deep Fried Turkey – How To Video

Would you like a simple & delicious way to prepare your turkey this year?  Try deep frying it.  We've deep fried our turkey for the past five years.  It is never dry, always juicy and never greasy (believe it or not).  I doubt we will ever return to traditional turkey roasting.

Here is a great "how-to" video from Alton Brown - one of my favorite Food TV hosts.  The only drawback to turkey frying is that it can be very dangerous.  The video does a great job of explaining how to fry it safely.

My Son at All of His Green Beans…I Have Evidence to Prove It

<------this is part of the reason why I joined. 

When I attended the business brunch I was sent home with several sauces to try.  I through some Porcini Mushroom Balsamic Dressing in with the canned green beans that they never eat. 

My son literally shoved a fistful of green beans into his mouth.  Normally, I would have told him to use a fork...but if he was *that* excited about green beans, I would let him eat them like a dog if he wanted.

I caught myself saying, "honey...you can have more green beans if you eat a little more mac and cheese".  Wow - I never thought I would be able to use beans as a bargaining tool!  =)

My daughter (who only likes "orange and red" veggies) devoured them too.  "They taste like pickles", she raved.   "Yeah..like really fancy pickles," I joked.  She didn't get it.  =)

Now, I don't expect you to jump on my website and start ordering products (unless of course, you *really* want to =) ) but I do hope you'll try a some unique ways to dress up foods that kids tend to push aside.

We have a "carrot-crunching" contest. Each person at the table takes a turn at making the loudest "SNAP" by biting their baby carrot. Everyone votes on who is the loudest. By the time we've finished playing, the kids have each eaten 5 or 6 baby carrots.

My Mom's trick growing up is one I use today. She would offer us cut up raw veggies and some sort of dip while she was fixing dinner. She knew we'd be hungry enough to eat anything. That way if we didn't eat our vegetables with the rest of dinner, she wasn't so worried. This works with our 4 year old daughter today. She loves cut up cucumbers and baby carrots in ranch dressing or other dips.

Halloween Party Recipes Kids Will Love

Throw some candy corn into a dish and set out a bowl of apples and you're all set for a Halloween party. Right? It could be that easy, but why not add some creativity this Halloween with the following fun kids Halloween recipes.

Halloween parties are a great excuse to be creative and make some scary but tasty treats. There will be plenty of candy floating around; so you can balance things a bit with some healthy snacks.

Kids young and old get a kick out of eating Eyeballs. Slice some cherry tomatoes, followed by a dollop of cream cheese and top with a sliced black olive for a delicious one eyed snack!

How about making Brain Dip?

Mix:
3 cups low-fat yogurt
1 cup mayonnaise
1/2 cup peach jam
1 tbsp. orange juice
1/2 tsp. to 1 tbsp. mild curry powder
1/2 tsp. white pepper

Serve with raw vegetables or crackers.

Of course you'll need some Bug Juice to wash down your ghoulish munchies.

Mix:
2 10-oz. pkgs. frozen strawberries, defrosted
1 6-oz. can lemonade concentrate, thawed
1 quart ginger ale
2 cups raisins
6 gummy worms

1. Mix the strawberries and lemonade concentrate in a blender until smooth and thick.

2. Gradually add ginger ale.

3. Transfer the beverage to a punch bowl. Stir in any remaining ginger ale and the raisins. Place the gummy worms on the rim of the bowl for a swampy effect. Makes 10 creepy servings.

Some may like the gummy worms, but how many will ask for more Worms on a Bun?

You'll need: Hot dogs, Hamburger buns and some Ketchup.
Cut the hot dogs into thin slices and score the edges (about three cuts per slice). Boil or microwave until the slices curl like wiggly worms. Serve three or four worms to a bun. For an extra-icky touch, add a few squiggles of ketchup. Ewwww!

If that's not gory enough for you then make some Creepy Witches' Fingers. This recipe for these creepy cookies makes approximately 60 fingers!
1 cup softened butter
1 cup sugar
1 egg
1 tsp Almond extract
1 tsp Vanilla
2 2/3 cups wheat flour
1 tsp baking powder
1 tsp salt
3/4 cup almonds, whole blanched
1 Tube red decorator gel
Cream together butter, sugar, egg, almond extract and vanilla. Mix in sifted flour, baking soda, and salt. Cover and refrigerate 30 minutes. Working with one quarter of the dough at a time and keeping remainder refrigerated, roll heaping teaspoonful of dough into finger shape for each cookie. Press almond firmly into 1 end for nail. Squeeze in the center of the finger to create knuckle shape; you can also puff it out rather than squeeze it in for the knuckle effect. Using paring knife, make slashes in several places to form knuckle. Use your own hand as a guide.
Place on lightly greased baking sheets; bake in 325* oven for 20-25 minutes or until pale golden. Let cool for 3 minutes. Lift up almond; squeeze red decorator gel onto nail bed and press almond back in place, so gel oozes out from underneath. You can also make slashes in the finger and fill them with "blood." Now that's gross!
